A volcano is a great project because you get to do crafts, learn about the science of volcanoes, and learn to see one in action. The choice of the volcano project that is right for you, but a little 'challenge. Project 1: The Volcano Easy

Project 3: The Spectacular Volcano
This volcano uses the power of Mentos and Diet Coke, and it is a spectacular eruption a few feet into the air stream.
